One of the most delicious Mutton Recipes comes from the Indian nomadic tribes of Rajasthan - Banjara Mutton. Banjara is a Hindi word for Nomads. So that's how it probably got its name. Recipe was shared with us from a fellow food blogger Ms Anu Pathria. We are delighted to feature her recipe of this iconic vintage dish and head #Chef cooked it on her newly acquired earthen cooking vessel called Chatti, which is from #Kerala giving it rustic flavour and making it supremely aromatic. #HeadChef followed Anu's recipe diligently and has posted the written recipe below. Mostly, on Weekends. RECIPE BELOW: Banjara Mutton Curry (Rajasthani Cuisine) Recipe by Anu Pathria A super simple yet absolutely delectable Mutton Curry made with just a few basic ingredients. Very flavorful & light. This is a regular item on my weekend menu. 🔺Ingredients: Mutton (Goat/Lamb): About 1 Kg (On the bone) Onions: 2 Medium (Roughly Chopped) Tomatoes: 2 Medium (Roughly Chopped) Ginger Paste: 2 Tablespoons (Homemade) Garlic Paste: 2 Tablespoons (Homemade) Yogurt: 4 Tablespoons (Beaten) Coriander Seeds: 3 Tablespoons (Roasted & Ground coarsely) Dry Red Chilies: 6 Large (Roasted & Ground coarsely) Turmeric Powder: 1 Teaspoon Coriander greens: 1/2 Bunch (Chopped) Mustard Oil: 3-4 Tablespoons Salt: As per taste 🔻Method: Wash the Mutton thoroughly under running water in a colander. Shake off the excess water. Set aside. Marinate the Mutton with the Ginger-Garlic paste, Yogurt, Salt & Turmeric. Refrigerate for 2-3 hours. Dry roast the Coriander Seeds over low heat until aromatic. Add the Dry Red Chillies. Keep stirring to avoid burning. Remove in a bowl/plate. Cool completely. Grind coarsely in a mortar & pestle or in a small dry grinder. Set aside. Keep the marinated Mutton out. Let it come to room temperature. Smoke the Mustard Oil in a large nonstick skillet or heavy bottomed pot over high heat. Reduce heat. Sauté the onion until golden. Add the Tomatoes. Cook covered over medium heat until soft & mushy, stirring occasionally. Now, uncover & cook (bhuno) over high heat until all the juices dry up completely & the oil leaves the bottom. Add the Mutton. Cook (bhuno) over high heat for about 10-15 minutes. Add 4 cups of water or as required depending upon the desired consistency of the gravy. A medium consistency is perfect. Cook covered over low heat for about an hour or until the Mutton is tender. *You should be able to cut it easily with a spoon. Add the chopped Coriander greens & the freshly roasted & ground Coriander Powder and the Red Chili Powder. Check seasoning. If it’s not hot enough, add some Degi Mirch Powder. Simmer for 5 more minutes. Stir well. Serve hot with Rice/Roti/Parantha/Naan & Salad.
