The food and laughs they had, the shopping they did and the memorable Jungle Safari to meet the Tiger family. Meeting her dear friend, classmate and host Apu Verma who is a retired army officer, she is reminded of her own experiences with Indian Air Force, especially the mess food she grew up eating thanks to her late father Air Cmdr Nirad Sinha Ray. Back in her Mumbai Kitchen, She recreates one of her favourite recipes from the Air Force Mess Menu - Chicken Stew. Chicken Stew recipe shared here is a healthy mix of white meat and garden fresh vegetables cooked in a light white sauce made with milk and all purpose flour. This Stew goes really well with sourdough bread or rice. It is light and non spicy, so perfect for a summer Lunch or Dinner. Also a delicious recipe to slip in healthy vegetables into your family's diet. Tempered with minimal spices like bay leaves, cinnamon, clove, cardamom and flavoured with just ginger, black pepper and onions.First the chicken is seared in the deep dish and taken out. Then onions are cooked till they turn pink. Chef Semanti also adds few whole peeled onions for extra fun while eating. Once the onions are done, the chopped chunky vegetables and after a few stir, adds back the seared chicken. At this stage, the spices, salt to taste is added. And after this, lid is closed and the chicken and vegetables are allowed to stew for 20-30 minutes. After that add some milk and all purpose flour paste made with mixing milk. Add some water if you prefer the sauce to be lighter. And stir well. Check for salt and flavour. Add Chicken Stock powder or Cubes or if you have fresh chicken stock then add that instead of water. And voila! Your Chicken Stew is ready! Serve it with some sourdough or homemade bread or even regular bread from the market would do. Alternatively, you can always serve it with plain steamed rice or have just by itself. It pairs well with white wine. Bon Apetit!
