This recipe was shared by one of our viewers Mayur Shekhar Jha on social media and it belongs to his father Shri Chandra Kanth Jha. It is a unique recipe as it does not use the regular ingredients common to most mutton recipes like onions and garlic. This is why in some parts of India it is also known as vegetarian mutton curry. Bengali cuisine, Bihari cuisine also has variations of this recipe. However, Mutton Atthey belongs to Jharkhand cuisine and is a special recipe as it is also used as offering to Lord Mahadev in temples in Baijnath dham, Deoghar, Jharkhand during special occasions and festivals. Recipe and Message shared By Mayur Shekhar Jha on Mutton Atthey Recipe: Mutton 1 kg Ghee 200gm Mustard oil 50 gm Coriander (dhaniya) 20 gm Jeera (cumin) 10 gm Turmeric (haldi) 10 gm Heeng, black pepper (little bit) Pataraj leaves (if pataraj is not available tej patta) Badi ilaichi (black cardamom) Garam Masala Green chillies 20 gm Tomato 100 gm Ginger 10 gm Kishmish/ raisins (optional) Salt as per taste Preparation on gas: Put mustard oil and 150 gm ghee in warm kadhai and heat on low flame for 20 mins. Then put heeng and pataraj and slow heat for 5 mins. Then put mutton and continue heating on low flame for 35-40 mins Then put salt, haldi and 50 gm ghee and fry on medium flame for 10 mins. Now put dhaniya, tomato and green chillies. Put 200 ml water, jeera and ginger and stir on medium heat for 10 mins Now put kishmish, black pepper, garam masala and badi ilaichi. Stir on low heat for 5 mins. Cover the pan and continue heating on low flame for 10 mins. Put off the gas and you are good to go. Message: My father's name is Sh Chandra Kant Jha. He makes Mutton Atthe regularly. Though this is not his recipe per se. Atthe is a traditional preparation served as an offering to Lord Mahadev in Baijnath Dham. Without onion and garlic.
