Popular street food of meatballs and noodles soup known as MIE BAKSO. She also shares the recipes for making fiery Asian sauces that go with Asian food. The Slow Fire Chef SE 04 EP 38 : MIE BAKSO | INDONESIAN STEET FOOD | INDONESIAN MEATBALLS AND NOODLES SOUP | STREET FOOD Mie bakso Recipe by Semanti Sinha Ray For the broth: Half head of celery chopped up 1 litre water 3 heaped teaspoons of chicken stock powder (I used knorr) 1/2 teaspoon of white pepper powder Put everything in a big pot and set it to boil. For the chicken balls: Raw Chicken mince 500 grams 1 teaspoon of chicken stock powder 1/2 teaspoon of white pepper Mix all this and keep ready. When the broth comes to a rolling boil, make balls with the chicken mince mix and drop them into the pot. While the balls are cooking cut up some veggies like red & yellow peppers, mushroom, carrot, cabbage. Add them to the pot when the balls are cooked and simmer for another 2 minutes. Serve steaming hot in a bowl with boiled & drained noodles along with the green chilli sauce. Green chilli sauce Blend together 10 green chillies, 2 cloves of garlic, salt to taste & 2 teaspoon vinegar. Sauce is ready. Red chilli sauce Soak 8-10 dry red chillies in 4 tablespoon vinegar with a little salt and sugar for about 3-4 hours. Purée it in the mixie with 5-6 shallots and 4-5 cloves of garlic. Pour 3 tablespoons of sesame oil in a small pan. Add the red chilli paste into the oil and cook on a slow fire stirring all the time. When the oil starts bubbling switch off the fire and keep stirring for a minute more. Red chilli sauce is done. Coriander sauce Finely chop a handful of coriander and a half inch piece of ginger. Mix in a tablespoon of honey, 1 teaspoon of soy sauce and 2 teaspoons of only oil from the red chilli sauce. Coriander sauce is done. New Episode, every week. Mostly, on Weekends.
