The Slow Fire Chef SE 04 EP 36 : PINEAPPLE RASAM RECIPE | SOUTH INDIAN RASAM RECIPE | SIMPLE RECIPE FOR RASAM Pineapple Rasam - Recipe by Mrs Vidhya Sokkalingam Pineapple 1 Arhar/toor dal (Yellow Lentils) - 2 to 3 tablespoons boiled Tomato 1 Curry leaves 3-4 sprigs Garlic 3-4 cloves Cumin seeds 1 &1/2 teaspoon Coriander seeds 1 teaspoon Pepper 3 teaspoons Red chillies 2 Hing 1/2 teaspoon plus a pinch Turmeric 1/4 teaspoon Salt to taste Oil 2 teaspoon Fresh coriander for the garnish Cut half the pineapple in small pieces and keep aside. Skin the tomato and chop into little pieces Puree the remaining pineapple along with the tomato skin. In the dry grinder, rough grind the cumin, coriander, red chillies, pepper and 1 clove of garlic. Keep aside. Crush the remaining garlic cloves and keep aside. In a pot add the pineapple puree and boiled dal along with 2 cups of water. Set it to boil on high flame - add the salt, turmeric, 1/2 teaspoon hing, a couple of sprigs of the curry leaves. When the liquid shows clear add the chopped pineapple and tomato. When the fruit starts softening, heat 2 teaspoons of oil in the tempering pan. Add mustard seeds. When the seeds start crackling add the remaining 2 sprigs of curry leaves and a pinch of hing. Switch off the flame and add the coarse ground masala and crushed garlic. Stir it around in the residual heat and then add it to the bubbling liquid in the pot. Add a little more water if the liquid has thickened. Simmer for another 2 minutes. Check for seasoning, garnish with fresh coriander and serve steaming hot.New Episode, every week.
