The Slow Fire Chef SE 04 EP 37 : RUM MUTTON CHAAP RECIPE | LAMB CHOPS MASALA | SPICY MUTTON CHOPS MASALA RECIPE | MUTTON CHAAP MASALA RECIPE Rum Mutton Chaap Masala Recipe by Amit Mehra Mutton chaap 500 grams For the marinade Black pepper 1/2 tsp Salt to taste Lemon juice from /2 lemon Ginger garlic paste Coriander powder 1 tsp Cumin powder 1 tsp Red chilli powder 1 tsp Turmeric 1/2 tsp Curd 4-5 tablespoons 4 cardamom, 4 cloves & a little piece of cinnamon, pounded For the gravy Onion 2, large sliced thin Tomato 2, sliced Tomato puree 3 tablespoons Garlic 10-15 cloves, crushed Green chillies 5, chopped Garnish Dark rum 100 ml Fresh coriander Green chillies Marinate the meat with the ingredients listed under marinade and leave it aside for 1 hour at least. Place a pan on slow fire. Add a bayleaf and half the crushed garlic. Toast it a bit and then add 2 tablespoon oil. When the garlic starts browning add the sliced onion and leave it to brown. In another pan heat 1 tablespoon oil. Add the sliced tomato, remaining garlic, salt and green chillies and fry. When the tomato is softened add the tomato puree and continue cooking till the oil floats to the top. Switch off flame and keep it aside. When the onions are brownish add the meat pieces without the marinade. Fry for a bit till the meat starts browning. Add the marinade and cook till the marinade has dried up. Then add the fried tomato masala and continue frying the meat till the meat is cooked and everything is well "bhunoed" Switch off the flame and add the rum a little fresh coriander and some green chillies.
