The Slow Fire Chef SE 05 EP 01 : ALOO GOSHT RECIPE | POTATO AND MEAT CURRY RECIPE | POTATO AND LAMB CURRY RECIPE | ALOO MEAT | ALOO MUTTON CURRY | आलू गोश्त Aloo gosht Recipe by Amit mehra Mutton - 1 kilo Potatoes - 4 large Onion - 2 large sliced thin Tomato - 4 pureed Green chillies For the marinade Ginger - 3 teaspoon grated Garlic - 3 teaspoon grated Red chilli powder - 1 teaspoon Cumin powder - 1 teaspoon Turmeric - 1/2 teaspoon Amritsari meat masala - 2 teaspoon Curd - 3-4 tablespoon Mustard oil 1 tablespoon Marinate the meat in all the ingredients listed under marinade. Leave it aside. In a pan add 2 tablespoon mustard oil and a couple of bay leaves and let it heat. When the oil is hot add all the onion and brown it. When the onions are brown add the meat with the marinade and slow cook till it all turns a rich brown colour. In the pressure cooker add 1 tablespoon mustard oil. When the oil is hot add the tomato puree along with the green chillies and 1 teaspoon of red chilli powder. Cook it till it is dry and the oil rises to the top. From the pan with the meat take out all the onion & masala and add it to the pressure cooker. Mix well and keep cooking on slow fire. Let the meat brown a little more in the pan while all the masalas are cooking in the pressure cooker. Then transfer the meat to the cooker. In the remaining oil in the pan add the whole, peeled potatoes after poking a few holes in the potatoes. Toss them around for a minute or two to coat them well with the oil. Add the potatoes to the pressure cooker. Add one cup warm water to the pan and scrape off all the meat, masala, oil and add the water to the pressure cooker. Close the lid of the cooker and let the pressure rise. After the first whistle put the flame on low and let it cook for another 5 minutes. Open after the pressure drops.
